At T.J. Maxx-

Trash can for school room
Trash can for basement bar
Towel rack basement bar
The list of wants:
Bread drawer
Paper towel holder

This is what we came home with from T.J. Maxx:
2 new twin quilts for 2 middle boys room
a storage box for middle son that says "my stuff"
a journal for our daughter
a new book about cars for our youngest
hand towels for the kitchen
an hour glass
a small clock for the school room
hand soap and lotion for the kitchen sink
a trash can for the basement bar

So, I got one thing on my list. That is how it always works out at T.J. Maxx!
Oh, no 4 o'clock photo. I just couldn't bring myself to draw any more attention to myself at T.J. Maxx.
(our youngest thought it would be fun to yell incessantly like he was at the playground)
Here we are cooking dinner together at 6.
As we were cooking he said,
"this is my favorite meal you make."

Creamy Chicken Enchiladas
1 medium onion, chopped
1 Tbsp. butter
1 4oz. can chopped green chiles
1 14oz. can petite diced tomatoes, drained
3 1/2 c. shredded cooked chicken
8 oz. cream cheese
4 c. shredded monterey jack cheese
1/2 c. heavy cream
8 large tortillas

Saute the onion in the butter in a large skillet over medium heat for 5 minutes. Add the green chiles, cream cheese and tomatoes. Cook until cream cheese is melted stirring often. Add chicken and stir to mix.
Cook tortillas in microwave for 30 seconds to soften. Place 1/4 c. of chicken mixture on tortilla followed by 1-2 Tbsp. cheese. Fold and roll tortillas arranging seam side down in 9X13 baking dish. Sprinkle tortillas in dish with cheese and drizzle with heavy cream. (don't skip this part)
Bake at 350 degrees for 30 minutes. Yum! You won't have any leftovers if feeding a family of 6!!

  2. Heather, I have a recipe from Jon that is even better, It is a little more labor intensive though. I'll give it to you. BTW Jon is a great cook. Didn't know if you knew that:)
